Summary of Results:

Other Findings

Results suggest that respondents who had higher intakes of total fat, saturated fat or cholesterol were less likely to report looking for label information on these nutrients.

The search is also related to perceived benefits and costs of using the label, perceived capability of using the label, knowledge of nutrition and fats, perceived efficacy of diets in reducing the risk of illnesses, perceived importance of nutrition in food shopping, perceived importance of a healthy diet, and awareness of linkage between excessive consumption of the nutrients and health problems.

Author Conclusion:

In summary, by exploring the roles of important label perceptions and psychological factors that have not been considered in previous research, this study contributes to the understanding of the kind of consumers who tend to not use fat or cholesterol information on food labels and the factors associated with use of the information.  The findings suggest both food labels and consumer education are needed in helping certain individuals consume a healthier diet.  Consumer education can provide educational messages to motivate and to teach label use.  This study has suggested some topical areas that education messages can emphasize.
