(2005) Stanols, Sterols and Disorders of Lipid Metabolism

Plants produce sterol compounds (phytosterols) that are chemically related and structurally similar to cholesterol. Research indicates that these compounds may:

  • displace cholesterol from the micelles,
  • limit the intestinal solubility of cholesterol
  • decreasing the hydrolysis of cholesterol esters in the small intestine
